I am always on the quest to make a delicious simple and healthy meal. A long time favorite of mine is stuffed peppers. But something I had not done before was prep the peppers ahead of time, freeze them and use a slow cooker. When I found a recipe for a slow cooker freezer meal using stuffed peppers I was intrigued. I gave it a try and it was delicious and so easy. I prepped the meal when I prepped a bunch of other meals and then the night before I planned to serve the peppers I pulled them out of the freezer to defrost over night in the refrigerator. The next morning I put them in the slow cooker and a few hours later I had an amazing dinner ready to serve!
One of the best things about stuffed peppers is that there are so many variations. But the basic idea is you get a whole meal in a pepper . You can have meat, rice, cheese and sauce or one of those ingredients. You can make an Italian flavored pepper or a Mexican flavored one.
To make this as a freezer meal you want to cook ground beef or ground turkey. Put the cooked ground meat into a bowl. Add the Seasoned Salt, chopped onion and the drained corn. Mix this well and set aside. If you are adding rice you can do that at this point. Now you want to cut off the top of the peppers and clean them. Then spoon the meat mixture into the peppers. After the peppers are stuffed you want to individually wrap them in Press n Seal or wax paper and place in large Ziploc bags. In another small 1 quart freezer bag you will add the Onion Onion and the tomato soup. Mix and seal the bag. Place both freezer bags in one large 2 gallon freezer bag and put in your freezer.
When you decide which night you want to serve the peppers you will put them out of the freezer the night before. The next morning stand the peppers up in a slow cooker and pour the soup mixture over them. You can cut off the bottom corner of the soup to make it easy to pour over the peppers.
Cover and cook on low for 7-8 hours or until the peppers are tender. Slow cooker times vary widely based on the size and type of slow cooker you own. If you want to add cheese you can sprinkle it on top of the peppers with about an hour or two remaining on the cook time.
Stuffed peppers are good for the whole family and they are also great as leftovers!
